Red Velvet Heaven

Well I made the Red Velvet cupcakes and brought two dozen in to my work the other day. They were a huge hit! I love to bake for people. My mind is already trying to figure out the next treat to make. Maybe I'll try to duplicate the Crack Bars from Elizabethan desserts. Those could easily be my diet downfall ( if I were on a diet)!!

Crazy Cupcake Holder

Found a double decker cupcake carrier at Target last night. $14.99. It holds 24 and hopefully won't smush em. I'll let you know on Monday. I heard that cupcakes are the new hot designer dessert. Whatever..I just wanna eat them, that's all.

Little Bar Food

Ok, so after work, a friend and I decided to skip our exercise class and go get a drink. We stopped at the new Calypso Fish House. Had a pretty good glass of Pinot Noir. It was a Mirassou. We split an order of the appetizer artichoke with blue crab. Small (mini artichokes) but pretty tasty. The baby artichokes could have been cooked a bit more but the taste was very good. The blue crab was yummy and the sauce on the side was perfect.
This was so much more fun than sweating..

Mexican Food Tonight

Tonight we went out for Mexican food. Ate at a little place in Encinitas called El Callejon. Had tacos (one shrimp and one Lomo Adobado), rice and beans. It was ok. Lomo a little dry. Black beans were very good. Needed a Margarita big time but had to drive so nada on the tequila. BTW, does anyone else but me feel that the Hell's Kitchen show is abusive? I watched a bit of it tonight and felt uncomfortable and embarrassed for those people. Where is that restaurant anyway?
Planning on bringing cupcakes to work next week so I am doing the hunt for one of those double decker cupcake carriers. Already have a killer recipe in mind.
